Simple Bakes – Mini Christmas Jam Tarts

A great alternative to mince pies and quick and easy to make!

Ingredients

  • 300g sweet shortcrust pastry (desert pastry) – or make your own
  • 1½tsp cinnamon
  • Christmas Preserve jam – I used the one from The Cherry Tree jam and chutney stall at the Christmas market but you could use different jam and use the cinnamon pastry for a more Christmassy feel

Method

  1. pre-heat the oven to 180C.
  2. mix the cinnamon into the pastry, if you’re making your own pastry mix the cinnamon with the flour before combining it with the existing mixture.
  3. roll the pastry to about the thickness of a pound coin, use a cookie cutter just bigger than the size of the tartlet moulds in the pan to cut circles out of the pastry and put them into the pan.
  4. put just under a teaspoon of jam into each pastry case.
  5. decorate with any leftover pastry, creating Christmassy shapes.
  6. bake for 10-15 minutes.
  7. ENJOY!
