Fresher’s week is hard for us foodies. Having to deal with ‘Fresher’s Flu’, meeting loads of new people, a big move into (not always nice) accommodation, multiple drunken nights out… well it doesn’t leave us with much energy to cook.
Unfortunately, when you’re hungover, a nice meal is sometimes exactly what you need. This recipe will give you a nice, filling, comforting and easy meal for those days where you’re tucked up in bed cringing about the night before.
New Potato and Bacon Salad
Ingredients for the salad:
- 2 eggs
- 3 rashers of bacon
- 250g small new potatoes
- 1/3 of a bag of mixed peppery salad leaves (e.g. rocket)
- Pinch of salt
- Pinch of black pepper
Ingredients for the dressing:
- Half a teaspoon of djion mustard
- Pinch of black pepper
- Half a teaspoon of mixed herbs
- 1 teaspoon of balsamic vinegar
- 1 teaspoon of white wine vinegar
- 1 tablespoon of olive oil
Method:
- Soft boil the eggs (boil them for 7 minutes), peel them (when cool!) and chop into quarters.
- Chop up the bacon into strips and fry until cooked.
- Cut the potatoes up into bite-sized chunks and boil for around 15 minutes.
- Gently mix up the eggs, bacon and potatoes with the salad leaves and season with salt and pepper.
- Mix the ingredients for the dressing up all in one go (I find it works very well in a jar as you can shake it up with the lid on).
- Drizzle the dressing over the salad and enjoy!
