Super Food Sides – Spicy ‘Slaw

A delicious and nutritious side which will spice up virtually any dish. Surprisingly quick and easy to make, and keeps for up to a week in the refrigerator.

Ingredients

For the slaw

  • 1 apple, cut into small squares
  • 2 carrots, grated
  • 2 tablespoons of gherkins, finely chopped
  • 2 teaspoons of capers
  • 2 tablespoons of chopped parsley
  • 1/4 large white cabbage, finely shredded

For the dressing

  • 3 tablespoons mayo’
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon paprika
  • 1 teaspoon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Pinch of salt and pepper
Method
  1. Whisk all of the dressing ingredients together to make the spicy dressing.
  2. Throw in the apples, carrots, gherkins, capers and parsley. Mix, add the cabbage and mix again thoroughly.
