A great alternative to mince pies and quick and easy to make!
Ingredients
- 300g sweet shortcrust pastry (desert pastry) – or make your own
- 1½tsp cinnamon
- Christmas Preserve jam – I used the one from The Cherry Tree jam and chutney stall at the Christmas market but you could use different jam and use the cinnamon pastry for a more Christmassy feel
Method
- pre-heat the oven to 180C.
- mix the cinnamon into the pastry, if you’re making your own pastry mix the cinnamon with the flour before combining it with the existing mixture.
- roll the pastry to about the thickness of a pound coin, use a cookie cutter just bigger than the size of the tartlet moulds in the pan to cut circles out of the pastry and put them into the pan.
- put just under a teaspoon of jam into each pastry case.
- decorate with any leftover pastry, creating Christmassy shapes.
- bake for 10-15 minutes.
- ENJOY!
