Recipe: Toffee-nut, crumble-topped apple muffins

These warming muffins are just perfect for a cold winter’s day. Super buttery, with a soft, warm centre that bursts with juicy roasted apple and cinnamon, their crumble topping adds an extra sweet something and the sticky vanilla glaze means that one really won’t be enough! Remi has taken the humble apple muffin and made it Bonfire Night-ready by adding a classic crunch and some seasonal spice. Perfect to nibble on whilst watching the fireworks this week!

INGREDIENTS

For the vanilla glaze:

2 tbsp icing sugar
2 tsp vanilla extract

For the crumble topping:

3 tbsp brown sugar
2 tsp cinnamon
3 tbsp butter melted
4 tbsp flour
2 crushed digestive biscuits

For the muffins:

150g butter
150g dark brown sugar
120g pot of vanilla yogurt
150g flour
2 eggs
1 tsp bicarbonate of soda
1tsp baking powder
2 tsp cinnamon
3 small peeled apples, chopped into small pieces

DIRECTIONS:

1. Preheat oven to 180c. To make the crumble topping, mix all the ingredients together and run through fingertips until a breadcrumb texture is formed – set aside.

2.Mix the butter and sugar together until soft and fluffy, slowly add the eggs and yoghurt.

3. Sift in flour, baking powder, bicarbonate of soda and cinnamon with a pinch of salt, mix everything together.

3. Add the chopped apple and spoon evenly into muffin cases, sprinkle on the crumble topping and bake for 20 minutes until golden and springy.

4. When the muffins come out of the oven, mix together the glaze ingredients and drizzle on whilst the muffins are still hot.
