QUICK COOK: Eggy Tomatoes

Preparation – 5 minutes

Cooking – 20 minutes

Serves – 1

Difficulty – Easy

Ingredients
  • 1 beef tomato
  • green pesto
  • 1 egg
  • salt and pepper
Method
  1. Heat oven to 200C
  2. Hollow out the tomato and put a little bit of pesto in the bottom.
  3. Crack an egg into the tomato, add some salt and pepper then pop into your pre-heated oven.
  4. Take out after 20 minutes and enjoy!
